This study aims to characterize the pectic oligosaccharides (POSs) generated from enzymatically hydrolyzed citrus peel pectin using a selected enzyme. Pectinex Ultra AFP was used depolymerize into POSs. The POSs were analyzed high-performance liquid chromatography (HPLC) and coupled with mass spectrometer (LC/MS) methodology determine composition of monosaccharides average molar distribution based on retention time. identified fractions predominantly neutral sugars (rhamnose, glucose, galactose) acidic (galacturonic acid), corresponding mole percentages 8.67%, 10.28%, 74.33%, 6.72%, respectively. degree polymerization (DP) in range DP3–DP8, containing three (trimers) eight (octamers) monomeric units. low DP indicates an advanced enzymatic hydrolysis up level
